Spinach and Kale Power Salad
This power salad is full of superfoods and will fill your body with nutrients, boost your energy, reduce inflammation, and leave you full for hours!

Put leafy greens in a big salad bowl.
Spiralize the peeled beet in your spiralizer and add to the bowl with the greens.
Spray a small sauce pan with coconut oil and saute mushrooms on medium-high heat until soft, about 3-5 minutes. Add to salad bowl.
In the same small sauce pan, add pine nuts and toast over med-high heat until they start to become golden brown, about 2 minutes and add them to the bowl.
Add the ground chicken meatballs and drizzle with garlic and herb vinaigrette.
