Simple Spicy Chicken Zoodle Soup

Packing lunches for the work week is always so hard. I know I should prep everything for the week on Sunday but sometimes I just dont have the time or energy to cook all day and would rather relax on Sunday! Or I attempt to prep Sunday but end up not making enough for the whole week and run out of food by Wednesday. Does anyone else go through left overs like its their job??? I do. Its a problem.

I have come to the conclusion soup is the PERFECT weekdayΒ lunch. It takes virtually no effort to pack in the morning or the night before and it is so easy to make a ton of it so it will actually last you the entire week. I go through left overs in t-minus 2 seconds and this soup actually lasted me all week last week! Plus it is super simple to make so it wont take over your entire Sunday.

With this soup I suggest you follow my guidelines but soup is so fun because you can kind of just wing it until its how your tastebuds like it! Make sure to taste test as youre cooking and add additional spices as you go. I clearly love spicy food but if you dont, just dial down or eliminate the jalapenos and red pepper flakes.

For this recipe all you need is one pot — it couldnt be easier! You basically just throw everything in and let the flavors simmer a bit. Make sure you dont add the zucchini noodles until the very end though since they get soft very quick. Enjoy!!

Ingredients

Instructions
  1. In a large stock pot over medium-high heat, add coconut oil. When oil is melted, add in chicken and cook chicken for about 5 minutes, until cubes are cooked about half way through.
  2. Add garlic, carrots, celery, chicken broth, jalapenos, and all the spices to the pot. Mix well and bring to a boil. Once boiling, add in beans and reduce to a simmer. Cook for an additional 15 minutes, until chicken is cooked through and carrots are soft.
  3. Spiralize zucchinis and add them to the pot along with the lime juice. As you spiralize the zucchini, dont forget to cut the strands into noodles of manageable lengths. Cook for an additional 2-3 minutes until zucchini noodles just start to become soft.
  4. Transfer to bowls and serve immediately. Top each bowl with some avocado and garnish with lime wedges for an extra burst of citrus along with the spice. If not eating immediately, do not add the avocado until just before it is served. Enjoy!
