Raw Stir Fry {vegan, paleo, gluten free}

Well I am finally starting to get over this sickness I’ve had since Monday and feel like a real person again!!! Thank goodness. Which also means my appetite is coming back which is great but also bad since I am doing this cleanse and that means my temptation for non-raw foods is back… so I’ve gotta work harder to fight those urges!

 

I mentioned in my original cleanse post that I am not the type of person that can just eat raw broccoli on this cleanse and that’s it. I know myself, and if I am going to make it a whole 2 weeks eating only raw veggies then I have to spice it up and actually make interesting raw recipes. I came across this stir fry recipe from Rawmazing and tweaked it a bit to make this awesome Raw “Stir Fry”!! It is super easy and completely raw. The sauce is also BOMB. I may double it next time I make it.

 

Start by peeling 3 parsnips and a sweet potato.

Chop sweet potatoes and parsnips finely in a food processor so they become like rice. Make sure to do the parsnips and sweet potato separately. Also chop pine nuts finely in the food processor, but not so fine that they become a powder. Mix these three ingredients together in a large bowl.

Fold in chopped broccoli and sliced mushrooms.

For the sauce, put all ingredients into the food processor and blend until well combined. I kept tweaking the amounts of the sauce ingredients until the sauce was how I liked it.

Pour sauce over veggie mixture and mix well. Enjoy!

For a more filling meal add some meat and/or eggs to make a “fried rice”! 🙂

Instructions
  1. Finely chop parsnips, sweet potato, and pine nuts in a food processor until they each begin to have the texture of rice. If using a food processor, chop each of these ingredients separately.
  2. Mix parsnip rice, sweet potato rice, and pine nuts together.
  3. Fold in chopped broccoli and sliced mushrooms.
  4. To make the sauce, put all sauce ingredients in a food processor and blend until well combined.
  5. Stir sauce into rice mixture.

      Oh my gosh, I’ve been on a turmeric kick lately. I put it in almost everything haha! Tasty and soo good for you. I haven’t gotten sick of it yet luckily!
