Raw Beet Salad


Raw Beet Salad! {vegan, gluten free, paleo}

 

This is ending week 2 of my cleanse and so far it has been going well! I’ve noticed I look more lean and I have more energy. Although I am out of town this weekend for a wedding in St. Louis so I am definitely cheating this weekend and pretty excited about it. 🙂 Will be back on track Monday though!

 

This raw beet salad is so easy to make and so delicious that you dont even realize it is raw! The citrus gives it a crisp and refreshing taste and it great to eat by itself or throw on top of a salad. My favorite way to eat it was by itself with a dollop of guacamole on top. So AMAZING!

 

I just started getting into beets this past year. I used to think they had a strange, earthy taste but if you season them well they can actually be really tasty and they have SO many health benefits! They are loaded with vitamins and nutrients, anti-oxidants, and have even said to have cancer fighting benefits. Just a warning: if you eat a decent amount of beets your pee will turn red. Don’t freak out!! 🙂

 

Start with three peeled beets.

Shred beets and place in bowl. I used my food processor’s shredding attachment and it worked like a charm.

Add juice of one lime, half a lemon, and a tablespoon of fresh orange juice and mix to combine. Add 2 tablespoons of olive oil and salt and pepper to taste. Finish with chopped chives and enjoy! If you aren’t going to serve it immediately save the chives until you are ready to serve.

Instructions
  1. Shred beets and place in bowl.
  2. Add lemon, lime, and orange juice and mix well.
  3. Mix in olive oil and salt and pepper.
  4. Add chives just before serving.
  5. Enjoy!
