If you’re looking for a quick and easy go-to weeknight meal… this is it!!
Some weeknights I don’t get home until 8pm and the last thing I want to do is spend any time whipping up some complicated meal. It cant get much better than throwing your favorite veggies and meat on a pan and leaving it in the oven for 25 minutes and then you have a perfect dinner ready for you with almost no clean up. 🙂 I am all for not having to do many dishes .. are you with me??
You can easily swap out your preferred veggies and even swap out the fish for you preferred meat. Just be sure to look up how long the respective meats and veggies need to bake for. I LOVE fish but for some reason I dont make it at home much so I thought I would go the tilapia route this time. Tilapia is low in fat and high in protein and not to mention delicious!
I spiralized my sweet potato using my new Veggetti Pro* spiralizer which I am obsessed with to make crispy sweet potato fries which were FABULOUS but if you dont have a spiralizer you can just cut the potato into chunks and roast it also.
Just make sure to keep an eye on your veggies and meat in case they don’t cook at exactly the same times. I ended up leaving my sweet potato in for about 5 minutes longer than the fish and veggies so that it could crisp up a bit more.
Here are the (SUPER EASY) instructions:
Preheat the oven to 350. Line a baking sheet with foil and spray with non stick spray. Season the fish and cut up your veggies. Drizzle veggies with olive oil and season how you prefer. Throw everything onto the pan and toss it in the oven for 20-25 min!
Remove from the oven and serve! TOO easy. 🙂 Enjoy!!
