You heard right…. homemade peanut better cups!! These are not only delicious but soooo easy. Perfect dessert to bring to a get together because it won’t take you hours to make and you only need a few simple ingredients.
You can really spice these up by using whatever nut butter you love. Play around with different combinations to make it interesting. Since this was my first time making these and I was bringing them to a holiday party I didn’t want to go TOO crazy and just used almond butter with a little cinnamon mixed in to give the cups a little extra flavor.
Start by melting your chocolate chips with the coconut oil. Use whatever chocolate you want — milk, dark, white — have fun with it! If you want the cups to be dairy and gluten free use Enjoy Life chocolate chips, like I did. I promise your family/guests wont even know it isn’t regular chocolate! I melted the chocolate in the microwave for about 1.5 min, stirring every 30 seconds.
Line a mini muffin tin with cupcake liners and pour a thin layer of chocolate into each muffin liner, making sure the entire bottom is covered with chocolate.
Once all liners have chocolate in the bottom, throw the pan into the freezer for about 5 minutes so the chocolate can harden up. After 5 minutes, take the pan out and put a dollop of nut butter on top of the hardened layer of chocolate in each mini muffin liner. I used about a tsp for each cup, but next time I think I would use more so that the cups turn out a little bit bigger. Make sure you flatten the nut butter down so that the tops of the cups will be pretty flat.
Once nut butter is in each cup, take the rest of your melted chocolate and add it to each cup so that the nut butter is completely covered.
Put cups back into freezer for about 1 minute to allow top chocolate layer to begin to harden. After 1 minute, take pan out of freezer and sprinkle the top of each cup with sea salt and any other flavoring you prefer. I also sprinkled mine with some cinnamon! Put back into freezer for about 5 minutes and once top layer is pretty solid, move the cups into the fridge for about 20 minutes to finish hardening completely. Take out of fridge when ready to serve!
