Its been a long week! Thank goodness the weekend is finally here. I was travelling last weekend and then had a ton going on at work this week so my blogging has been slacking…. but I’m baaaaack! 🙂 I made these peppers while I was out of town visiting my boyfriend because they are healthy, delicious, and require minimal effort. The trifecta. Greg and I love cooking together but neither one of us has the patience to make a meal that takes hours to prep.
These peppers are the perfect meal because they’re packed with tons of turkey (=lean protein) and veggies!! They’re also super versatile… just throw in whatever you have laying around the house — you really cant go wrong! Eat with avocado and salsa on top (my go to obvi), an egg on top, or on top of a big salad. With all the protein they are also super filling so one of these bad boys will leave you full for hours.
When you’re shopping for peppers make sure to look for ones with flat bottoms! You don’t want your peppers falling over while theyre baking and all the good stuff falling out. That would be TRAGIC. Make a big batch of these babies and have meals for the week… these big peppers will go a long way!
