Amazing Grain-free Banana Bread {gluten-free, vegan, paleo}

Well I have over ripe bananas…. again. I seem to never get through a full batch of bananas anymore without some getting over ripe. Does anyone else have this problem??

 

Well now I am back to debating what to do with these extra bananas. Lately I have been using my extra bananas to make batches of these banana oat cookies to have on hand for breakfasts/snacks/desserts. I decided to switch it up this time and make some grain-free banana bread!

 

Warm banana bread + butter or almond/peanut butter = heaven!! This recipe calls for coconut flour as the only main dry ingredient, so expect the texture of the bread to be a little different than if you were to use regular flour. I thought it was a bit denser than regular banana bread but the flavor of the bread was GREAT!

 

Start by preheating the oven to 300 degrees. Spray your bread pan generously with oil. Mash up those bananas! Add in eggs, honey, melted coconut oil, and vanilla until combined.

In a separate bowl combine dry ingredients — coconut flour, baking soda, sea salt, and cinnamon. I have been told if you sift the coconut flour before adding it to breads it will make the bread less dense. I did not do that myself, but the bread was definitely dense, so I recommend sifting it if you aren’t feeling lazy like me. 🙂

 

Mix dry ingredients into the wet ingredients to form a dough.

Stir until ingredients are just combined. The dough will be thick and not as wet as your typical banana bread dough. If you want some extra sweetness, fold in Enjoy Life dairy, gluten, soy, and nut free chocolate chunks!! SO good and definitely adds the perfect amount of sweetness to the bread, which is not super sweet on its own.

Spoon batter into the bread pan.

Bake for about 75 minutes, until golden brown.

Let cool for at least 15 minutes in the pan. (I am the worst at this part!!! I am always so eager to eat it. Try to resist the urge to take it out of the pan too soon. I of course was too eager one of the corners fell apart, so learn from my mistakes! 🙂 ) Slice and serve.

 

Nothing beats warm banana bread with melty chocolate chips <3

  4. Mix dry ingredients into wet ingredients until just combined.
  5. Fold in chocolate chips.
  6. Fill baking pan with batter and distribute it evenly in the pan.
  7. Bake for about 75 minutes, until golden brown. Let cool for 15 minutes before serving.
