Isnt a big bowl of soup just the best thing to come home to on a warm winter night? Not only will this soup warm you up, but it is LOADED with veggies! (Loaded is an understatement… 🙂 )
I love broccoli myself, but even for a broccoli-lover, it is hard sometimes to keep it interesting and not get bored of it. I always steam it and eat it the same way every time. This soup is a great new way to eat broccoli and with all the spices and the vegetable stock it is full of flavor! It may even convince someone who is skeptical of broccoli that broccoli can actually taste good..!
I have to credit the inspiration for this soup to my boyfriends mom. 🙂 I was visiting them over the holidays and she mentioned that she made a soup like this and I couldn’t resist to try making a version of it myself. It is TOO easy to be true! Did i mention that this soup can be prepped and ready to eat in less than 10 minutes??
All you need is some broccoli, kale, vegetable stock, and a bunch of spices and just blend it all up in a high speed blender!
It doesnt get much easier than this! Modify the spices to your liking. I went heavy on the garlic and pretty heavy on the heat (per usual). I also topped the soup with some raw broccoli and pumpkin seeds to give it a little crunch. YUM! I will be doubling the recipe next time though, There was not nearly enough left over for me. And what is a good soup with out excessive amounts of leftovers?! 🙂
