Soak dried plums and strawberries for 15 minutes in warm water to soften. Drain excess water.
Place nuts, cocoa powder, salt, coconut sugar, freeze dried strawberries, and vanilla extract in a food processor and blend until a fine powder forms.
Add dried fruit and water to processor in batches and blend until a paste forms. You will have to scrape down the sides of the processor a few times to get it to process evenly.
When a batter forms, roll about 1 T of batter into a ball. Cover energy bite with toppings of choice. Repeat with remaining batter. Store the bites in an airtight container in the freezer or refrigerator (freeze preferred). Let the balls sit in the freezer for at least an hour before serving. Enjoy!
