Its February and you know what that means….. love is in the air! HAHA **cough cheesy cough** But seriously, Valentine’s stuff is around every corner… its too much sometimes. Valentine’s Day may be tacky but it gives us foodies a great excuse to make pretty and delicious chocolate desserts!! Cant complain about that right?? 🙂

 

This year try swapping those chocolate covered strawberries with these healthy Dark Chocolate Strawberry Energy Bites!  The healthy fats from the nuts in this recipe make these energy balls the perfect mid-day or post-workout snack and will also satisfy that late night sweet tooth I know you all have.

Dark Chocolate Strawberry Energy Bites

Lately nuts have been my GO TO snack by far. I used to have the mindset that I had to stay away from nuts because theyre high in fat and calories, but recently I finally broke away from that myth and started eating MORE healthy fats/nuts and LESS carbs/sugar and have really noticed a big difference! There are so many kinds of nuts and they all have various health benefits. In this recipe there are almonds and walnuts. Almonds are my FAVORITE nut! They are on the lower end of the fat and calorie spectrum compared to other nuts, which makes them a great way to get those healthy fats in your diet. They also have tons of calcium and fiber, as well as immune boosters Vitamin E and B. Walnuts are a nut I dont eat enough, and I dont know why! They have lots of heart-healthy monosaturated fat as well as high levels of omega-3 fatty acids, which may protect against blood clots, heart disease, arthritis, and even depression. (source)

Dark Chocolate Strawberry Energy Bites

These energy balls are SUPER easy to make and dont require any baking! Instead of using dates in this recipe like many no-bake energy bars use, I decided to use dried plums. They do not have too much of a flavor difference and are much lower in sugar than dates. However, if you have dates on hand or prefer dates to plums you can easily use dates also. I also used dried strawberries as well as freeze dried strawberries in this recipe. I limited the use of the dried strawberries since the kind I had were artificially sweetened so I used quite a bit of freeze dried berries to make up for it.

Once you make your energy balls, have some fun and roll the balls in toppings of your choice! I used crushed freeze dried strawberries, cacao nibs, and dark chocolate cocoa powder.

Instructions
  1. Soak dried plums and strawberries for 15 minutes in warm water to soften. Drain excess water.
  2. Place nuts, cocoa powder, salt, coconut sugar, freeze dried strawberries, and vanilla extract in a food processor and blend until a fine powder forms.
  3. Add dried fruit and water to processor in batches and blend until a paste forms. You will have to scrape down the sides of the processor a few times to get it to process evenly.
  4. When a batter forms, roll about 1 T of batter into a ball. Cover energy bite with toppings of choice. Repeat with remaining batter. Store the bites in an airtight container in the freezer or refrigerator (freeze preferred). Let the balls sit in the freezer for at least an hour before serving. Enjoy!
