Chocolate Chai Spiced Granola

Granola is one of the BEST snacks to keep around the house. It is so versatile AND so easy to make! Its the perfect topping for yogurt, smoothie bowls, ice cream, or chia pudding. Or mix it with your favorite milk (I just discovered cashew milk and LOVE it) and eat it like cereal. Or eat it on its own as a delicious, filling, crunchy snack! So many options.. and Im sure you can think of even more I didnt mention!

 

My favorite part of granola is the roasted nuts. They are SO tasty and full of healthy fats that will keep you full for hours. Eating more healthy fats will also help your body burn fat more efficiently and who doesnt want that??

Chocolate Chai Spiced Granola

Sometimes just plain granola can get boring though so I was looking to spice it up a little bit this batch. I am a sucker for chai lattes and chai tea so I decided to combine my love of chai with my love of granola (AND my love of chocolate.. duh always) in this Chocolate Chai Spiced Granola. Mix it with some milk and you’ve got yourself a crunchy chai latte in a bowl. 🙂

Ingredients

Instructions
  1. Preheat oven to 300.
  2. In a small bowl, mix together honey, melted coconut oil, vanilla extract, and almond extract, Set aside.
  3. In a large bowl, mix together nuts, oats, salt, and chai spices until well incorporated. Add honey mixture into oat mixture and combine until all dry ingredients are coated with the honey mixture.
  4. Spread granola on greased baking sheet in a single, even layer and bake for 30 minutes or until nuts start to brown. Stir granola a couple times throughout the baking process to ensure even cooking.
  5. Remove pan and let granola cool for about 10 minutes. Add in dark chocolate chips. If granola is still slightly warm, chips will melt and bind some of the granola together. If you dont want the chips to melt, be sure to let granola fully cool before adding in chocolate.
