It’s winter which means its squash season!!! I love squash because it is a vegetable but also so filling! It reminds me of a starch almost, like a potato but with so many more vitamins.
True story: I have a friend who is 28 years old and just discovered squash yesterday. No joke he had never even heard of it before, let alone all the different kinds!! I laughed sooo hard when he asked me what it was and if they sold it at grocery stores. I dont know how its possible to not have heard of squash by the age 28 but apparently it is. If you are one of these people, don’t worry, you aren’t alone. 🙂
My favorite kind of squash is spaghetti squash!! It is stringy and looks just like angel hair pasta. I usually eat it with other veggies and meat and pasta sauce on top. Or you could throw it in a salad! Make sure to season it though because it can be a little bland if you dont. I always mix a little butter, salt, pepper, and other seasonings I have around in it. So good.
A lot of people cook spaghetti squash in the oven. I dont know about you but I dont have the patience for that, haha. It takes about an hour in the oven but only about 12 minutes if you use this technique!
Start by cutting your squash in half and scooping out the inside seeds and flesh. You should notice the flesh is easy to scoop out but when you hit the actual squash it will be much tougher.
Once the insides are scooped out, put in the microwave face up for about 12 minutes. This may vary depending on how big your squash is. Smaller ones will take about 10 minutes and larger ones might take 14.
Cook until you can easily scrape the squash from the skin with a fork. The squash should be stringy and tender but not too mushy.
Be careful because the squash will be super hot when you take it out of the microwave! Scoop all squash into a bowl and season to your taste!
